Eat more veggies: Bell Peppers and Spicy Stir-Fry

For a vegetarian who hates vegetables and collects recipes based on that fact, I have to admit something. I'm beginning to love certain veggies and am starting to find a meal without them out of the ordinary. There are still a lot out there that doesn't quite tickle my fancy, but I'm on my way to conversion. I just keep persisting, keep adding a bit of a new vegetable or vegetables in general until I like them. I'm wearing myself down.

One of the vegetables that has got me now is the bell pepper. They go well in a sandwhich, can be added to rice or pasta, and I want to make them into a salsa. Lately they've been on sale in downtown Montreal so they're economical.


and, since one of my goals is to work on the nutrition for my vegetarian lifestyle, eating this food is a good idea. Besides their health value, they are the star of my go-to recipe: let's call it Ring dem bells stir-fry.


This recipe is very simple and delicious.
  • You can use fresh or frozen veggies and I even prefer tofu that's been frozen.
    • *Tip: I've been cutting up and freezing veggies and tofu in containers that are the right sizes for a few meals. I take them out the night before I'll use them and keep them in the fridge or cook once they're thawed. I freeze the ingredients separately so I can mix and match. However, I'm trying to sneak the carrots in with the peppers. I don't like them and I'll never use them on their own.
  • Dice up your peppers, tofu, and carrots; tear up your mushrooms and spinach if you haven't already done so. (The amount I use really depends on the size of my pan)
  • If you want to use garlic or chives, now's the time to chop them too.
  • Add a little oil, if I need to, and put in the tofu and mushrooms.
  • Add the soy sauce (I use about 2 tbsp), hot sauce to taste, and chives, garlic, or spices you are using.
  • Stir it around a bit. The mushrooms and tofu will absorb a nice amount of the liquid. You can also add some chopped up boiled eggs- very nice.
  • Then add fresh spinach, chopped up peppers and carrots.
  • Give it a few stirs as it cooks over low heat.
Voila! Yumminess!


This is good on it's own, with rice, as a filling for a grilled pita, with pasta, you name it. It tastes good and it's a cheap and easy way to slip veggies into many meals.
